Miss Margarita first opened the doors of its colourful Byron Bay cantina in December 2012. Byron locals Emma and Greg Thomson’s vision for a friendly place which blended the energy and flavours of Mexico with the beachy vibe of Byron was realised and became an instant hit with locals and tourists alike.
From day one the friendly staff have shaken, smiled and ran to keep up with an unwavering demand for the fresh, moreish food and ‘hit the spot’ cocktails. ‘It has been quite overwhelming at times,’ said Emma, ‘but we thrive on the buzz of the place. Seeing happy customers with a cocktail in hand never fails to make us smile!’
